Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. I have taken my cake out of the oven, I used pyure sweetner and only used 1 cup of it instead of 1 1/3 cup like it said originally, I wish I had read all the suggestions because I would have added that little bit extra almond flour like you suggested. The batter still wasn’t too runny so I figured it would work. I added a couple of drops of orange flavoring and a pinch of salt. I batter was so good I was tempted to eat a little extra batter My springdoem pan did leak but I am not too worried about that. I did need to leave the cake in 10 extra minutes as it wasn’t completely cooked at 30 minutes. I’m so excited to try this, I’ll come back later and give you my opinion on taste

Hi I’m new to Keto. I have been reading about it, and understanding what to eat and what not to eat. My problem is I’m not sure if I’m doing it correctly. Well, I am going to give this another try. I have great difficulty in eating greens , or drinking them, also I am not fond of fats, years and years of low fat diets have totally screwed my metabolism,and taste buds. This dessert is absolutely delicious! It took me a long time to make it. I’m not much of a cook. It’s a bit expensive but worth it. The only mistake was when preparing the first layer ( cream cheese layer), I put all of the sweeteners in with heavy cream at once which stopped my cream from whipping up. Hi Donna, as you have used the same chocolate as me I’ve done some research now. The reason may be that you need to heat the chocolate slowly and gently. Heating it too quickly and too much can cause the cocoa butter and cocoa to separate. I’ve added this info to the recipe and really hope you’ll try the recipe again. By the way, have you tried the Montezuma 100% chocolate with orange nibs? It’s the best tasting unsweetened chocolate ever (it actually tastes great all on its own) and I bet it would be amazing in this cake. I give 4 stars for the effort to make something good for the diabetes patients.The only thing I did not like at this product is that the sweetness is way TOO strong. These is a problem with most of the American sweet products. I just want to remind to the Americans that the sweet products should have more taste/flavor and less of an avalanche of sugar. This product is a dedicated diabetic friendly product , so, in my opinion, the sugary taste must be diluted/suggested. We need to re-learn from other cultures, particularly from Europeans, how the sweets suppose to be; not aggressive, more like suggested/guessed sweet, and , evidently , much more healthier.The big scale producers might use a scale of sweetness, lets say from 1 to 10 (lets say scale 10 for over 25g sugar per serving), so the customers could make their choice also! Hi Lisa, I think you might end up with chocolate syrup if you use honey for the sweetener. You may want to look into granulated honey, which might produce a coarse or grittier texture to the chocolate, but you may still have a chance of getting the chocolate to solidify. I’m sorry the pastry cream has proven pesky, Douglass. Sometimes it takes “taking it too far” and scrambling the eggs to see how much cooking the mixture can take to thicken. Oh how I wish I had read the comments before I attempted this.. brand new spring form leaked considerably while I was out of the kitchen.. house filled with smoke, etc. had to pull the cake out of fhe oven half way through..clean the oven etc By the time it went back in the oven it didn’t have a chance and had already sunken in. Hi Megan, Sorry I didn’t get the chance to reply to your comment until now and that the pudding didn’t set up! It’s hard to tell what went wrong without being in the kitchen with you. Most likely the xanthan gum didn’t mix well enough into the pudding mixture. Make sure you sprinkle it in lightly and whisk vigorously right away. You could try adding a little more next time, but don’t add too much to avoid having the pudding get slimy. Other than that, keep in mind that the pudding will set more as you refrigerate it.

You should be able to use cocoa butter as an alternative fat. All chocolate that meets the standard of identity in the US uses not only the ground cocoa bean but also additional cocoa butter. The bean does not have enough cocoa butter content to make a smooth chocolate once you grind it and expose all the surface area of the cocoa bean solid. This recipe starts out even lower in fat since it uses coca powder, basically a defatted ground cocoa bean. The issue with cocoa butter is it has multiple crystal states and has to be tempered correctly or you will get bloom. An interesting fact is that cocoa powder is one of the “waste” products from chocolate making since it requires additional,coca butter to make a smooth chocolate and you can not call it chocolate if you use too much non cocoa butter fats.

I too found this recipe to be very, very bitter. In fact, I had to spit it out. I am use to the taste and baking with stevia. I used KAL brand pure stevia and Sweet Leaf liquid stevia. I wonder if the 1 1/2 Tablespoons is just too much. I felt as thought my Dagoba chocolate was wasted. Wanting to save the product, I reheated it, added homemade sweetened condensed coconut milk and homemade coconut milk caramel sauce and some yacon syurp. I then added some roasted salted cashews. I put it on a cookie sheet, spread it out, sprinkled on some Enjoy Life mini chips and put it in the refrigerator. Two hours later I took a taste and found it to be much less bitter and something I will be able to eat. I will probably try your recipe again using only the brand products you used, but with the cost of them, I will use much less powdered stevia. Thanks for all you do to provide sugar free recipes to all of us.
You mentioned ketone strips. If they are the urine strips they are useful to see if you are in ketosis, fat burning mode, but be aware they are not completely accurate but are a good guide to how you are doing. The blood strips are way too expensive but more accurate. I have a blood glucose monitor and went through a phase of testing to see how I react to dairy, protein, cream, coffee etc. I rarely do it now as I want this way of eating to be as simple as possible, but again, a useful tool starting out.
7 carbs additional carbs devided by 16 servings? 0.43 additional carbs per serving. Definitely still low carb. I am on a low carb not a no carb diet. This delicious low carb recipe has helped me (in part) lose 45 pounds and still get my dessert fix at the end of a low carb meal. I do not think I could do a low carb diet if I had to give up sweets! It freezes well when saved in individual servings or keeps in the fridge for days. Well done!

This cake was amazing! I made it for my husband’s birthday party and it was a huge hit! I could not find coconut flower so I used almond flower instead. I subbed Truvia for Swerve (could not find Swerve either, I’m limited with items due to where I live). But even with subbing these ingredients it was so good! I can’t believe it’s even dietary!
