If you’re not a fan of dark chocolate or need a dairy free option this candy bar is made with coconut butter, you can tell by the lighter color than the chocolate bars at the top of the post. This recipe is exactly the one I used for making my No Bake Chocolate Coconut Butter Bunnies last year for Easter! Just melt and pour into candy bar molds. I honestly don’t think it has a coconut flavor because the chocolate flavor is more prominent, but you can be the judge as this takes literally less than 5 minutes to make and 30 minutes or so to harden.
Those familiar with Pinkaew's martial arts extravaganzas with Ong Bak and Tom Yum Goong, will know roughly what to expect from Chocolate. This did not come out well for me. The consistency is good but the taste is super bitter. At first I didn’t add all the powdered stevia called for because it seemed like a lot of stevia for just the one bar. I wanted to taste as I went. I gradually increased hoping the sweet would outweigh the bitter but I just couldn’t seem to get it right. I took a small bit and mixed it with honey and that tasted much better. But, honey is too high in sugar for me so I was excited about using stevia. Not sure where I went wrong but I still appreciate the recipe!

Hi, Amy. Yes, you can replace it – it is ground really fine and added to other ingredients. The coconut helps reduce the carbs a bit, but you can use more almond meal if you want. The texture will be a little different, but it should still taste good. Do yourself a favor and make the pastry cream a day or two before you assemble, so it’s nice and cold. Let the assembled dessert chill overnight. Use full fat ingredients. Another reader used a lactose free cream cheese and her dessert didn’t set, but she may not have cooked the pastry cream enough, too. OH MY! This is fantastic, we loved it, and I’m relatively sure this recipe is dangerous to my waistline! I made this for my husband to take to work to share with nonketo coworkers. It was a hit. Half the pan was gone. I used monk fruit sweetener since nonketo people seem to prefer it over swerve. In my experience anyway. I also made the quick method for the chocolate layer. I wanted to tell you about some changes I did to this tonight that were amazing. (Don’t get me wrong-the original is amazing too, but I was craving coconut.). I substituted coconut butter for peanut butter, coconut extract for the vanilla, and coconut stevia for the English toffee. It was so amazing with just a little whipped cream on top and a very small dollop of strawberry jam. Live your recipes!

This will be an exciting time ahead for you as you will really learn so much about nutrition and your health. You will discover new ways to cook, which will eventually become your new favourites. You will lose weight and gain so much energy. You will also lose that constant feeling of guilt associated with eating, which is what I had. Eat too much, feel guilty, eat less, then overeat because you’re starving, feel guilty, and so the cycle continues. My weight has remained below my weight watchers goal for 2 years now without counting a single thing, how refreshing and healthy. You will gain control of your appetite and actually want to eat nutritious foods. Wheat and sugary foods no longer appeal (this is from me who used to buy 5kg bags of flour for my baking).
