I have been LCHF for 4 weeks 20g or less carbs daily track everything but my blood ketone 1.3 -.3 – .6 To get benefits of ketone my reading shld be at least 1.5 My foods have included live yoghurt 1 TB milk = 1 tsp per 3 cups of tea 50 g raspberries . Cld these be interfering? To work out my macros I based my cals/day 1300 I thought fat amount is remainder of cals after 20g carbs and 90 g protein. That sounds like a good idea! I also try to avoid gums/thickeners most of the time, but haven’t found a good replacement for pudding. I’ve never tried gelatin though – it might work! I’d start with the same amount and then see if you might need more than the amount of xanthan gum to get it thick enough. Let me know how it goes if you give it a try.

Is the Stevia a necessary component to making the dish work or is it just an extra sweetener to coincide with the Erythritol? We’ve tried several versions of Stevia, and I just can’t seem to find my way past the after-taste, even in small amounts. If keto is your goal, it’s usually best to start lower and then see if you can stay in ketosis when increasing.
