I made this over the weekend and YUM! The only thing is that it didn’t set very well and I got more of a pudding consistency than anything. As soon as I cut into it it became a pudding/soup. It was still very good. I did use lactose free cream cheese and arrowroot powder…could that have been my downfall? Or did I not let things chill long enough. It didn’t specifiy how long to let the cream cheese filling chill so I only did about 30 min. And I chilled the whole thing overnight. Still very tasty!
Hi I’m only new to LCHF and you’re information has been amazing, thank you! I have one question though I’m doing well cutting out sugar, breads etc but just wondering do I need to portion control my meals? Typically I have a 2 egg one letter with cheese, spinach and mushrooms for breakfast. Then warm chicken salad with rocket, cucumber, tomatoes, Persia fetta and a poaxhed egg. Dinner yellow curry with brocoli, carrot on cauliflower rice. Snack a low carb cheesecake, nuts maybe a smoothie.
Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! Absolutely go for the wine! As long as you go for an unsweetened wine and limit yourself. I only have a glass at the weekends as I know all my good intentions go out the window once I’ve had a glass and it’s harder to say no to more dark chocolate. If your weight loss ever stalls, you may need to reassess how many glasses you have as the alcohol will always be metabolised before anything else so weight loss will often stop. As for gluten, all my recipes are naturally gluten free because all my recipes are grain free. Read my post on Gluten free vs Grain free to truly understand. Beware of GF products because they are so high in carbs because they are made with rice flour, tapioca starch etc. And remember, gluten free junk is still junk 😉 Good luck Mary, keep coming back and asking questions.
I used option 2 that does not call for the xanthan gum. The recipe called for “heavy cream” which I used. Should I have used “heavy whipping cream?” “Pecan meal” I used was “pecan chips” made by “Fisher”. Finally, the parchment paper seemed to disintegrate into the bottom layer of the dessert 🙁 please help! We love this dessert and want to nail it!

* Pecan meal and pecan chips are not the same thing. Pecan meal has a fine consistency, almost like flour, just a tiny bit more coarse. “Pecan chips” are much larger pieces and wouldn’t work the same way, unless you grind them into a meal/flour yourself. Most likely, the extra butter from the crust layer absorbed into your parchment paper because the “pecan chips” wouldn’t absorb it the way an actual pecan meal would.

If your daughter loves fruit that is great, but try and get her onto the less sugary fruits and nutrient dense ones like berries and add some cream to keep her full. What a great post. I thought i would add about the selection of food you eat on keto and that everyone is different. Some food gives you energy and some doesnt, this varies person to person. I started and quit keto 3 times before i managed to find my balance. The first few times it made be poorly, from the shock of diet change. However, you can wean yourself into the diet which i did the last time when i had the most success.
I wish I’d read through the comments before making this. I substituted plain Trader Joe’s liquid stevia for the Sweetleaf vanilla liquid stevia. Otherwise, I followed all ingredients and instructions exactly, but it turned out grainy and bitter. I then added a drop of peppermint essential oil hoping to redeem to a better flavor, but it was no help. It might be super helpful if the recipe instructions indicated clearly to use no substitutions for brands or types of stevia.

Chocolate bloom is caused by storage temperature fluctuating or exceeding 24 °C (75 °F), while sugar bloom is caused by temperature below 15 °C (59 °F) or excess humidity. To distinguish between different types of bloom, one can rub the surface of the chocolate lightly, and if the bloom disappears, it is fat bloom. Moving chocolate between temperature extremes, can result in an oily texture. Although visually unappealing, chocolate suffering from bloom is safe for consumption and taste unaffected. Bloom can be reversed by retempering the chocolate or using it for any use that requires melting the chocolate.
Did you taste the mixture before you let it harden in the mold? If it was bitter to you before letting it harden, you needed more sweetener. For some getting used to stevia is a big transition. I use the vanilla liquid stevia by the brand Sweetleaf. I have tried Trader Joe’s vanilla stevia but I didn’t like it as much as Sweetleaf. Also different brands of liquid stevia are made differently and the way they are processed to form the liquid will produce different levels of sweetness. NuNaturals vanilla stevia is much sweeter than Sweetleaf. Don’t dump out your bottle but try other recipes with it and hopefully you can use it up and not feel you wasted your money on it. I’m sorry you didn’t like the recipe.

I finally got the time and mind set to make this dessert, I have been wanting to do it for so long now but felt a bit intimidated by it. I will say right now that I shouldn’t have been, it went very smoothly and I did all the layers in 1 hr. and 10 min. time :) I did bake the crust and let it cool on the counter for about 15 min. then stuck it in my freezer while the pudding was in the fridge cooling. All the layers are put together and it is sitting in my fridge just waiting for me to dig in. Can I just skip supper tonight and eat this instead!?!?!
