Wow 2 kg in only 16 days is fabulous. The rate of weight loss can depend on any things but mainly how much you have to lose and what your eating habits were like before starting LCHF. Steady weight loss is the key and more importantly remember all the amazing health benefits that LCHF brings. I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. This is going to become a Christmas Day staple at our house. We celebrate our Southern Hemisphere Christmases with beach visits and sprinkler play, and turning on the oven for more than ten minutes seems very wrong when it’s 37 degrees C. I managed to whip this up on Christmas morning (we had a quiet one this year). It tasted amazing and looked beautifully festive. Thanks to the detailed instructions, I managed the pudding bit with very few lumps and felt very proud. The finished product is huge – I agree that it would be great for a special occasion; there’s really too much for one family unless you have a lot of people around. I made it circular like a pie and stuck the leftovers in the freezer – it froze beautifully, and tasted like ice-cream cake when frozen. The one thing I would do differently next time is to make the first two layers the day before as the method suggests. It wasn’t really cold and set enough to layer the cream on easily and I had to be super careful not to mess up the chocolate pudding layer.
Greetings i used ingredients exactly. My execution wss different on making the chocolate pudding, after seeing ingredients it looked like chocalte cutard so i made it li ke custard. If you use that, you’d probably need about 2 1/2 teaspoons for the crust, 1 tablespoon + 2 teaspoons for the cream cheese layer, 3 1/2 tablespoons for the pudding layer, and 2 1/2 tablespoons for the whipped cream layer. I’d still grind it for finer consistency if you can.

* Pecan meal and pecan chips are not the same thing. It should firm up over night. Honestly, Andrea, I received so many complaints about the cornstarch (arrowroot) powder not being low carb that I reduced the amount by 1 teaspoon. Yes, the whipped cream should be spread very carefully over the pudding. Refrigerating over night should set it. Please, please, let me know if it doesn’t. That’s a great question, Tania, and unfortunately, the problem is also the solution. Saturated fat is, by definition, solid at room temperature (as opposed to unsaturated, which is liquid at room temp), so it is what makes the chocolate hold its shape. If you were to use another fat, you’d have to add some sort of stabilizers, either chemical (gross) or starch (which would make the chocolate taste more like a brownie, but with a really bad texture, and I wouldn’t recommend this). I have seen fiber, such as acacia or psyllium, used in commercial chocolate, but I have never tried it myself. So, unfortunately, coconut oil is your best bet in this case. It does have many health benefits, but I understand that it is not appropriate if you have to watch your saturated fat intake.

Great questions Melissa. I think the gentle sweet is an erythritol and stevia blend and is granulated, correct? I would try using just a little less of the super sweet blend and taste after all of the ingredients have been added. If you need to, add as many doonks of powdered sweetener as you need. If you have the regular GS, use the same amount as specified in the recipe and then add 2-3 doonks, tasting as you go.
Another option is to decrease the intake of carbohydrates slowly, over a few weeks, to minimize side effects. But the “Nike way” (Just Do It) may be the best choice for most people. Removing most sugar and starch often results in several pounds lost on the scale within a few days. This may be mostly fluids, but it can still be great for motivation.

Hi Stephanie. I’m sorry the dessert did not set well. It could be one of three reasons. First, as you mentioned, it could have been the lactose free cream cheese. Having the dessert refrigerate overnight should have been perfect. The other reason may be because I updated the pudding recipe to have less cornstarch/ arrowroot because people kept complaining that they did not want to use it even though it resulted in a superior recipe. I would suggest adding 1/2 more teaspoons of arrowroot powder. And third, it may have been that the pudding was not cooked enough. It should be really thick after cooking and refrigerating before adding it to the layered dessert. I hope this helps. -Kim

Hi Kristy, that is great that you have discovered us and you have a LCHF nutritionist on board. You are ahead of the game already! This will be an exciting time ahead for you as you will really learn so much about nutrition and your health. You will discover new ways to cook, which will eventually become your new favourites. You will lose weight and gain so much energy. You will also lose that constant feeling of guilt associated with eating, which is what I had. Eat too much, feel guilty, eat less, then overeat because you’re starving, feel guilty, and so the cycle continues. My weight has remained below my weight watchers goal for 2 years now without counting a single thing, how refreshing and healthy. You will gain control of your appetite and actually want to eat nutritious foods. Wheat and sugary foods no longer appeal (this is from me who used to buy 5kg bags of flour for my baking).
If you want to lose weight, then cut the carbs down until you start dropping. It’s always a balancing act. After decades of Weight Watchers and other crazy diets I now don’t count a single thing. It is the most intuitive way of eating for me for over 3 years now. I pretty much stay at goal weight and still enjoy my red wine, 90% chocolate at weekends and some occassional low carb baking.

Some people on a keto or low carb diet choose to count total carbs instead of net carbs. This makes it more difficult to fit in more leafy greens and low carb vegetables (which are filled with fiber), so you should only try that if you don’t get results with a net carb method. I did it! No sugar/flour for the WHOLE month, the only thing I allowed myself was dried fruit (raisins mostly, because that filled my need for a sweet something after a meal). I have been LCHF for 4 weeks 20g or less carbs daily track everything but my blood ketone 1.3 -.3 – .6 To get benefits of ketone my reading shld be at least 1.5 My foods have included live yoghurt 1 TB milk = 1 tsp per 3 cups of tea 50 g raspberries . Cld these be interfering? To work out my macros I based my cals/day 1300 I thought fat amount is remainder of cals after 20g carbs and 90 g protein. BHB salts are a very useful tool to calm the hangry beast and establish appetite control. If you use 1 tsp to 1 Tbsp of the powder in 4 oz of water when you feel inappropriately hungry, it will raise your blood ketone concentration enough to satisfy your hypothalamus for at least a couple of hours. The brand called KetoCaNa has the best taste in my experience for an individual product, though I now use a 50/50 blend of that plus another ketone salt preparation called Nutricost Ketone Salts, both available from Amazon.com. The blend tones down the acidity of the KetoCaNa product and provides the best overall taste to my palate. You won’t need it every day, only when you feel like you need appetite control.
Of course, these chocolates are a special treat, but I can definitely appreciate a basic candy bar grabbed in the checkout aisle, too. At the end of a long, stressful day, some people think about unwinding with a glass of wine or a beer, but I think about a nice piece of chocolate. Baking is fun when you’ve got the time and the head space for it. But let’s be honest. It can get a little involved. You need to keep an eye on the clock. Who can really put up their feet and relax when they’ve got a cake in the oven? A few minutes too long or a few minutes too short and you’re either trying to hide the blackened cake crust with frosting or the whole thing collapses the minute you’ve put it on the table.
Last year while I was going grain free/LCHF, I decided to get him and his siblings gluten free (While planning to eventually get him completely grain free, however that hasn’t gone to plan yet lol!) The futher away from gluten he was, the more veges he started to willing eat. We just started him off with carrots as he seemed to like them more than other veges. He loves potatoes and meat so we would tell him have a carrot then you can choose to have a mouthful of potato/meat then have another carrot etc. We just kept perserving, adding in the other veges and adding in more (Eg you can have some potato after you have eaten 4 carrots etc) and now a few months ago for the first time he cleaned off ALL his veges before he even touched potato or meat without being asked. It hasn’t happened again since BUT he will eat all of one food group before having something else.

My wife and I (and our little family) and becoming quite passionate about avoiding sugar. We were reading an article the other day that says cancer actually feeds on sugar! Yikes. And that cancer isn’t something you just get, it’s something that grows in your body for the long-term, over the course of many years. It’s just not detected until it strikes and it strikes hard. We are so motivated to clean up our act and inspire our kids to eat well. Don’t quote me on the article, that’s just what it said. But eating sugar just can’t be good. Great recipes, love the spaghetti squash one in particular.
Take it from one who knows; hunger can really make sticking to a healthy diet difficult. Once hunger strikes, your brain goes into hunter/gatherer mode and can cause you to seek out and chow down on the nearest convenient source of calories. Inevitably, this won’t be anything that’s good for you and will very likely be one of those foods linked directly to spiking your insulin – donuts and candy for example. As you know by now, eating lots of sugar does nothing good for your health and will cause you to gain weight fast. Of course my affection for chocolate isn't anything special -- not everyone adores it or goes for crazy flavors, but most people at least like it. That's why it might surprise you to read this quote from a 16th century Spanish Jesuit missionary describing chocolate as "loathsome to such as are not acquainted with it, having a scum or froth that is very unpleasant taste" [Source:Authentic Maya]. Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go.
