The only adjustment I made to the recipe, was the addition of about a tablespoon of lemon juice to the cream cheese mixture; for just a little bit of tanginess to off-set all the sweetness. This is also how we make 4-Layer Delight back home, so I thought it would work here. I’ve tried it both ways, and the little hint of sourness from the lemon really seems to make it perfect; to me and the wife at least.
I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. Any ideas for snacks and treats that r still low carb so I don’t feel like a total ‘food leper’ my husband’s tongue in check explanation for me.
But what’s really in it? 1 package of Oreo cookies, cream cheese, sugar, and Cool Whip. Just for the cookie layer it’s 24 carbs per serving. (That’s 36 cookies at 10.5 carbs each, divided by 16) But, I’m not going to break down the carbs in each layer of this tasty dessert. I just want to think about all of the weird stuff in the cookies, instant pudding and non-dairy whipped topping. Yuck! I shudder.

Keep up electrolytes. The major electrolytes in our bodies are sodium, potassium and magnesium. Because a low carb diet (especially a keto diet!) reduces the amount of water you store, this can flush out electrolytes and make you feel sick (called “keto flu”). This is temporary, but you can avoid or eliminate it by salting your food liberally, drinking broth (especially bone broth), and eating pickled vegetables. Some people also choose to take supplements for electrolytes, but it’s best to first consult a doctor that understands and supports keto/low carb lifestyles.
Hi Donna, as you have used the same chocolate as me I’ve done some research now. The reason may be that you need to heat the chocolate slowly and gently. Heating it too quickly and too much can cause the cocoa butter and cocoa to separate. I’ve added this info to the recipe and really hope you’ll try the recipe again. By the way, have you tried the Montezuma 100% chocolate with orange nibs? It’s the best tasting unsweetened chocolate ever (it actually tastes great all on its own) and I bet it would be amazing in this cake. Sometimes sunflower seed flour (which is basically finely ground sunflower seeds) can work as an almond flour replacement, but it depends on the recipe. It should work fine for this one (I haven’t tried it, but think it would). I also have recipes categorized by diet type on my Recipe Index page, which includes a nut-free section. Hi Libby, I have been trying to find my way within the LCHF world for a few months and I am just not winning .. I eat a good hearty breakfast and a cup of coffee with cream and I’m good for the day till dinner when i’ll have a salad with chicken or steak .. most days my meals don’t vary (i’m easy that way).. problem is the weight is maintained and I’m just lost 🙁 please would you assist me .. anything would be appreciated 🙂
Hi Barb, That can definitely be it. Losing when you are close to goal can be more difficult. It could also be that your body’s healthy weight is a little higher than what you’d like – which doesn’t mean you can’t lose, but makes it more difficult. If just eating Keto foods isn’t working, double check the macros for your weight and see if the amount you’re eating needs to be adjusted. Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. I made this over the weekend and YUM! The only thing is that it didn’t set very well and I got more of a pudding consistency than anything. As soon as I cut into it it became a pudding/soup. It was still very good. I did use lactose free cream cheese and arrowroot powder…could that have been my downfall? Or did I not let things chill long enough. It didn’t specifiy how long to let the cream cheese filling chill so I only did about 30 min. And I chilled the whole thing overnight. Still very tasty!

One thing to consider when you're shopping for sugar-free dark chocolate is the percentage of cacao in your chocolate. True dark chocolate products contain anywhere from 70 to 100 percent cacao, and the higher that number is, the richer and more bitter the chocolate will taste. That’s a great question and I’m sorry to say that I don’t have a scientific answer for you. I can only say this: When you add water to cocoa powder, you get a liquid or goo consistency, not a solid. I can only imagine – and this is just an educated guess, since I’m not a food scientist! – that that means that cocoa powder doesn’t have enough saturated fat to hold the chocolate together, so adding more, via coconut oil, provides the structure of the chocolates. Again, just a guess, but from decades of experience baking with cocoa powder, I can tell you that it alone is not a sufficient source of saturated fat to create the rich, solid mass we consider to be good chocolate. I’ll bet if you googled a little, you could find a more scientific answer! 🙂

Boiled eggs, avocados, pork crackling, nuts, fat bombs, calamari, granola bars, cold meats … I hope these give you some ideas. Eventually the goal is to stop snacking, but in theme time, these might help you out.

I do want to mention that erythritol based sweeteners tend to crystallize in wetter recipes (puddings, lemon curd) and adding more may result in crystals forming and a little crunch here and there.
