This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

Did you taste the mixture before you let it harden in the mold? If it was bitter to you before letting it harden, you needed more sweetener. For some getting used to stevia is a big transition. I use the vanilla liquid stevia by the brand Sweetleaf. I have tried Trader Joe’s vanilla stevia but I didn’t like it as much as Sweetleaf. Also different brands of liquid stevia are made differently and the way they are processed to form the liquid will produce different levels of sweetness. NuNaturals vanilla stevia is much sweeter than Sweetleaf. Don’t dump out your bottle but try other recipes with it and hopefully you can use it up and not feel you wasted your money on it. I’m sorry you didn’t like the recipe.

I will change the recipe to omit the almond milk, but I have found that most often the reason the pudding mixture fails to set is because it wasn’t cooked enough. I finally got the time and mind set to make this dessert, I have been wanting to do it for so long now but felt a bit intimidated by it. I will say right now that I shouldn’t have been, it went very smoothly and I did all the layers in 1 hr. and 10 min. time :) I did bake the crust and let it cool on the counter for about 15 min. then stuck it in my freezer while the pudding was in the fridge cooling. All the layers are put together and it is sitting in my fridge just waiting for me to dig in. Can I just skip supper tonight and eat this instead!?!?! I know it will taste delicious because all the layers on their own are delicious. Thank you for all your recipes!!
Absolutely, Janae. You can use more of your favorite sweetener. I do want to mention that erythritol based sweeteners tend to crystallize in wetter recipes (puddings, lemon curd) and adding more may result in crystals forming and a little crunch here and there. And while brands such as Lily’s sugar free chocolate chips do exist on the market, making your own at home not only saves money, it also enables you to control what ingredients to use. Lily’s chips contain soy, and many other brands contain dairy and artificial ingredients, so if you want to avoid those ingredients as well as sugar, making your own sugar free chocolate chips recipe is the way to go. I’ve also included an option below for making the chips with maple syrup or agave if you want refined sugar free and vegan chocolate chips.

Some people on a keto or low carb diet choose to count total carbs instead of net carbs. Sometimes sunflower seed flour (which is basically finely ground sunflower seeds) can work as an almond flour replacement, but it depends on the recipe. What a fabulous start you are making. There is no denying the change will take some time. I know as I have a fussy 7 yr old who even used to hate roast chicken, and last night he went back for thirds!!! or cauliflower rice (makes me a happy mumma). If your daughter loves fruit that is great, but try and get her onto the less sugary fruits and nutrient dense ones like berries and add some cream to keep her full. Take a look at my Kids pages for more ideas and tricks. I always let my youngest choose 1 thing on the plate he doesn’t have to eat but he has to eat the rest, he thinks he has some control so is happy. Just keep trying and do the best you can and be proud of what you are able to change then look back to see how far you have come.

I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)
This dessert is absolutely delicious! It took me a long time to make it. I’m not much of a cook. It’s a bit expensive but worth it. The only mistake was when preparing the first layer ( cream cheese layer), I put all of the sweeteners in with heavy cream at once which stopped my cream from whipping up. Didn’t make that mistake again. Definitely recommend it!!!! (I used a new method, chocolate whipped cream). Thank you.
My wife and I (and our little family) and becoming quite passionate about avoiding sugar. We were reading an article the other day that says cancer actually feeds on sugar! Yikes. And that cancer isn’t something you just get, it’s something that grows in your body for the long-term, over the course of many years. It’s just not detected until it strikes and it strikes hard. Any suggestions for butterscotch pudding to make this with? We always made a half chocolate (on one side not mixed) and half butterscotch which was personal favorites with this combo. No idea where to begin making butterscotch pudding. Will have to research I suppose. BTW we call this Maxine for some reason through our families recipe of this. I would agree with many, but not all of your points. “Fat and carbs don’t make us fat. It’s only processed fat (vegetable oil) and processed carbs (white flour and added sugar) in processed foods (foods with more than one ingredient) that inherently lead to overeating and weight gain.” I have also said this throughout my website and one of the biggest myths I try to bust is that we are not NO carb we are LOW carb. By removing processed food from our daily diet, we almost become low carb by default. Nutrient dense, low-carb whole foods are encouraged but not to be overdone. Lower carb diets reduce insulin resistance and inflammation. Lower carb diets, with healthy fats, gives a better blood lipid profile and lower TG which is the best predictor of heart health. There are so many benefits from eating nutrient dense lower carb whole foods.

Starting your day with a healthy and nutritious breakfast helps kick-start your metabolism, stabilize your blood glucose, and ward off mid-morning hunger. This delicious low carb recipe has helped me (in part) lose 45 pounds and still get my dessert fix at the end of a low carb meal. I do not think I could do a low carb diet if I had to give up sweets! It freezes well when saved in individual servings or keeps in the fridge for days. Well done!
You should be able to use cocoa butter as an alternative fat. All chocolate that meets the standard of identity in the US uses not only the ground cocoa bean but also additional cocoa butter. The bean does not have enough cocoa butter content to make a smooth chocolate once you grind it and expose all the surface area of the cocoa bean solid. This recipe starts out even lower in fat since it uses coca powder, basically a defatted ground cocoa bean. The issue with cocoa butter is it has multiple crystal states and has to be tempered correctly or you will get bloom. An interesting fact is that cocoa powder is one of the “waste” products from chocolate making since it requires additional,coca butter to make a smooth chocolate and you can not call it chocolate if you use too much non cocoa butter fats.
