Hi Priscilla, it’s actually difficult for me to remove the ingredients in my cookbook program to recalculate everything and then add it back. It’s not a very user friendly program. I suggest you use a food journal program like fatsecret.com and add all of the ingredients (minus those for the pastry cream) and see what you get. I’m sorry. Use fat as a lever.  We’ve been taught to fear fat, but don’t! Both keto and low carb are high fat diets. Fat is our source of energy as well as satiety. The key to understand, though, is that fat is a lever on a low carb or keto diet. Carbs and protein stay constant, and fat is the one you increase or decrease (push the lever up or down) to gain or lose weight, respectively. So if your goal is weight loss, eat enough fat to be satisfied, but there’s no need to “get your fats in” once you’re satisfied.

* Pecan meal and pecan chips are not the same thing. Pecan meal has a fine consistency, almost like flour, just a tiny bit more coarse. “Pecan chips” are much larger pieces and wouldn’t work the same way, unless you grind them into a meal/flour yourself. Most likely, the extra butter from the crust layer absorbed into your parchment paper because the “pecan chips” wouldn’t absorb it the way an actual pecan meal would.
Absolutely go for the wine! As long as you go for an unsweetened wine and limit yourself. I only have a glass at the weekends as I know all my good intentions go out the window once I’ve had a glass and it’s harder to say no to more dark chocolate. If your weight loss ever stalls, you may need to reassess how many glasses you have as the alcohol will always be metabolised before anything else so weight loss will often stop. As for gluten, all my recipes are naturally gluten free because all my recipes are grain free. Read my post on Gluten free vs Grain free to truly understand. Beware of GF products because they are so high in carbs because they are made with rice flour, tapioca starch etc. And remember, gluten free junk is still junk 😉 Good luck Mary, keep coming back and asking questions.

I’m a little wary of sweeteners and was originally going to use coconut sugar, but when I compared sugar levels, I had to go with the Swerve. I warned people ahead of time, just in case they didn’t want to intake a sweetener. My sister is breastfeeding too, so I wasn’t too sure how she felt. Anyway, it was a hit! I use half pecans and half raisins, completely forgot about the coconut, and messed up the frosting recipe, but it still came out great! Eryhtritol is a sugar alcohol (having both properties of sugar and alcohol in its chemical structure) which tastes very much like sugar but is about 60 -70% the sweetness of sugar. It is not absorbed by the body therefore it has zero calories and does not affect blood sugar. It undergoes an endothermic reaction when it melts, creating a cool sensation which is especially nice in frozen desserts. It has become a staple ingredient for low carb bloggers and bakers. Google erythritol. It can be purchased as crystals like sugar or blended with other ingredients like stevia, monk fruit or chicory root – Truvia is a brand that comes to mind. A powdered sweetener works best. Granular would be the next best thing – everything would still come together the same way, but you might taste the granules if they don’t fully dissolve, so it wouldn’t be as smooth. I don’t think liquid sweeteners like honey, agave, or maple syrup would work, because they’d add extra liquid and would require consistency adjustments for the other ingredients. When weight loss stalls something needs to change. Firstly it could be that you are near your goal weight and so you have found a natural balance, secondly other things might be creeping back in that you have forgotten to count (for example too many creamy coffees or an extra glass of wine). Take a look at how much you are eating for breakfast and dinner, are they too big and actually the same size as 3 meals just eaten in 2? Nuts, dairy and alcohol are generally the biggest culprits in stalling weight loss. Sometimes we just have to remind ourselves of the health benefits of LCHF rather than the weight loss. It will happen, albeit slower than we would wish. For me it is about no longer counting anything, no longer being on the sugar roller coaster, improved nutrition and no longer having any guilt surrounding every meal or snack. Dark chocolate is usually more dense (so not soft, right?) and not as sweet as milk chocolate. These need a firm bite and the overall taste is just ok (but at least there is no chemical after taste as with some sugar free stuff), but they served the purpose. Main gripe is, at least with this seller, you have to order enough candy bars to supply a neighborhood of diabetes patients (like me). So, still searching, but in the meantime munching away at second of 24 bars!

Greetings i used ingredients exactly. My execution wss different on making the chocolate pudding, after seeing ingredients it looked like chocalte cutard so i made it li ke custard. You may want to look into granulated honey, which might produce a coarse or grittier texture to the chocolate, but you may still have a chance of getting the chocolate to solidify. I have a cat and she happily eats “Fussy Cat” Grain Free cat food http://www.vippetfoods.com.au/V.I.P.-Petfoods-Grain-Free-Dry-for-Cats/0,27127,112732,00.html . I don’t know if this is the best, but she has this alernating with fresh meat. Since she has changed to this formulation, she has had no gingivitis (inflammation of her gums).
Update: The old version of the chocolate pudding layer is back by popular demand! I've posted both options above, so you can decide which one you want. The older version takes longer and sometimes people have issues with thickening, but tastes more like pudding when you get it right. The newer version is faster but more like a chocolate whipped cream layer.
The base of this recipe is cacao butter (also known as cocoa butter), which is a creamy fat that is solid at room temperature. It may be available at a health food store, but I get mine on Amazon. If you can’t find cacao butter, you can use coconut oil. However, if you do use oil, you must keep the chocolates chilled, even once they are set. Coconut oil will be too soft at room temperature.

Commercially-made candy bars and dark chocolate truffles are made with far more ingredients than they need to be, which is not only unhealthy, but (in my experience) interferes with the chocolate taste that – call me crazy – I want. (Looking at you, Godiva) I may be a total chocolate snob, but I want my chocolate to taste like… well, mostly chocolate. When I bite into most grocery store chocolate, I can practically taste my blood sugar spiking. Ick.
