If you’re not a fan of dark chocolate or need a dairy free option this candy bar is made with coconut butter, you can tell by the lighter color than the chocolate bars at the top of the post. This recipe is exactly the one I used for making my No Bake Chocolate Coconut Butter Bunnies last year for Easter! Just melt and pour into candy bar molds. I honestly don’t think it has a coconut flavor because the chocolate flavor is more prominent, but you can be the judge as this takes literally less than 5 minutes to make and 30 minutes or so to harden.

Hi Cherie, you can use coconut milk. Some people have had problems with the chocolate layer setting up when the almond milk is mixed with it the next day. It’s usually because they didn’t cook the pudding long enough. If your pudding isn’t super thick and almost solid, then don’t add the extra milk. I have taken my cake out of the oven, I used pyure sweetner and only used 1 cup of it instead of 1 1/3 cup like it said originally, I wish I had read all the suggestions because I would have added that little bit extra almond flour like you suggested. While the oven was on self-clean mode, I ran back to the store and exchanged my springform pan for a new one, bought some more unsweetened chocolate and eggs, and went home to try again. This time I cut the parchment large enough to run it up the sides about 1/2″. I buttered the underside of the parchment before buttering the rest of the pan, poured in the batter, and baked for 30 minutes as the center was too sift at 25 minutes. It only leaked about 1/2 tsp, which is likely the butter from the parchment. I know springform pans aren’t waterproof (or butter-proof in this case), but I’ve never had one leak before. I usually only use them for cheesecake and never line the bottom with parchment.
Oh, Karen. I feel your pain! It hit me early at 40 (seven years ago). I had kept the weight off with low carb until I started the blog. Now I’m struggling. Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.

Hi, I have been giving ditch the carbs a go…so far only in the form of bread,pasta,rice, this was quiet hard for me as I didn’t realise how much I got through a day! I started seeing a nutritionist, who has started me on a B-12 injection 2 times monthly, and a LCHF diet. He wants me to stay between 20-35 carbs daily for at least 3 months. I would try using just a little less of the super sweet blend and taste after all of the ingredients have been added. If you need to, add as many doonks of powdered sweetener as you need. If you have the regular GS, use the same amount as specified in the recipe and then add 2-3 doonks, tasting as you go.

Hi Kelly, All packaged foods will have a nutrition label that list the macros per serving, including fat, protein and cabrohydrates. Net carbs, which is what most people look at for low carb and keto, are total carbs (the amount on the label) minus fiber and sugar alcohols, as explained in the article above. Most likely, the extra butter from the crust layer absorbed into your parchment paper because the “pecan chips” wouldn’t absorb it the way an actual pecan meal would.

I typically eat scrambled eggs with turkey, a piece of wholebread toast and coffee for breakfast, salad and breast of chicken with vegetables for lunch and something similar (chicken or red meat or salmon) for dinner, with 2 snacks of 3 rice cakes with 150 gr. of turkey and a protein shake if I go to the gym (weights training 3x week). In the first 3 months of eating like this my % fat went down from 17.5 % to 14 % (44 yr old male), while keeping weight constant, but another 4 months later I stay the same. Hi I’m new to Keto. I have been reading about it, and understanding what to eat and what not to eat. My problem is I’m not sure if I’m doing it correctly. I’m constantly hungry whereas information reads that I will never be hungry. I use fats as required along with topping up with vegetables in my meals yet this does not fill me up. Hi Leila, I think you could, but I haven’t tried it. I’d recommend a powdered sweetener (Swerve Confectioner’s or Sukrin Melis) if you do this, so that the chocolate pudding layer is smooth. The replacement for the dark chocolate in the pudding layer should be approximately 1/2 cup cocoa powder, 1 1/2 tbsp butter, and 3 tbsp powdered sweetener (may need to adjust to taste). Let me know how it goes if you try it!
Otherwise, if you can’t find erythritol, I’d probably go with something like Truvia Spoonable. That’s actually a combination of erythritol and stevia, but more common in stores. If you use that, you’d probably need about 2 1/2 teaspoons for the crust, 1 tablespoon + 2 teaspoons for the cream cheese layer, 3 1/2 tablespoons for the pudding layer, and 2 1/2 tablespoons for the whipped cream layer. I’d still grind it for finer consistency if you can.
