Good question. There is no doubt that grass fed, free range, organic is best but it is simply out of the price range of so many. What is more important to start with is to eat real whole food as best as you can find. I certainly don’t buy organic all the time. Do what you can when you can. It is more important to change from cereals to eggs rather then getting hung up on a perfect source of egg. Take a look at my food brands page. It needs updating as I change brands all the time as I find better ones, but is helpful. I really try and make this as easy on ourselves as we can. We shouldn’t need a degree in nutrition to eat well. Some sites complicate things far too much. My motto is “do the best you can as often as you can”. I agree, labels are pretty poor and not standardised (net vs total carbs for example). Good luck 🙂
Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! “It is definitely worth the time it took to make and I don’t think it took much longer than when I used to make a high sugar dessert similar to this as I always made my chocolate cream layer from scratch. If someone wanted to cut the time then they could do like you suggested and make some of it the day before. What I love about this recipe is it is so similar to what has been one of my family’s favorite desserts. It felt like welcoming an old friend…but so much better because of the carb count. Maya, I made this and it’s AMAZING! In the crust, which I reduced to less than half (just to reduce overall carbs), I used some ground pecans, almond flour and hazelnut flour. oh MY! I don’t feel one ounce of guilt eating this and thanks to you and all your recipes, I’m SO NOT DEPRIVED. I’m a foodie so I love to cook. You have made my Keto way of life a huge pleasure. What a great post. I thought i would add about the selection of food you eat on keto and that everyone is different. Some food gives you energy and some doesnt, this varies person to person. I started and quit keto 3 times before i managed to find my balance. The first few times it made be poorly, from the shock of diet change. However, you can wean yourself into the diet which i did the last time when i had the most success.
Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. I give 4 stars for the effort to make something good for the diabetes patients.The only thing I did not like at this product is that the sweetness is way TOO strong. These is a problem with most of the American sweet products. I just want to remind to the Americans that the sweet products should have more taste/flavor and less of an avalanche of sugar. This product is a dedicated diabetic friendly product , so, in my opinion, the sugary taste must be diluted/suggested. We need to re-learn from other cultures, particularly from Europeans, how the sweets suppose to be; not aggressive, more like suggested/guessed sweet, and , evidently , much more healthier.The big scale producers might use a scale of sweetness, lets say from 1 to 10 (lets say scale 10 for over 25g sugar per serving), so the customers could make their choice also! I wanted to tell you about some changes I did to this tonight that were amazing. (Don’t get me wrong-the original is amazing too, but I was craving coconut.). I substituted coconut butter for peanut butter, coconut extract for the vanilla, and coconut stevia for the English toffee. It was so amazing with just a little whipped cream on top and a very small dollop of strawberry jam. Live your recipes!
Hi. I tried making the zucchini tortillas for the first time this week. They did cook and sort of brown, but they did not look as golden color as the ones in your picture. Also, the inside did not seem to cook as much and was still like the batter. So the outside was dry and cooked but the inside was mostly uncooked. Where did I go wrong? I want to try it again!
Yay, another kiwi has discovered my website xxx I tend to shop mainly at New World and buy seeds, nuts, almond meal etc when they are discounted. The bulk bins are fine, but check the price per 100g, sometimes they are not as good value as regular packets that are “on special”. I also buy my veggies form the fruit and veg shops when I am near them, I find the supermarkets to be incredibly overpriced generally. Good luck and enjoy all the new recipes here. 🙂

Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. Hover over the serving size and slide it to how many servings you would like to make. It is very handy.
