I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)
I am starting on low carbs as I have been advised that my body doesn’t deal well with carbs and I am at risk of diabetes. I also need to lose weight. I understand your principles of ‘doing the best you can’, avoiding processed foods etc, but wondered if there is a general rule of thumb to go by when reading food labels, such as aiming for food with no more than 2% carbs?

Is this pure stevia extract? I’ve never tried that, so I’m not sure, actually. Thinking about the recipe, it is the eggs and also the chocolate that bind the cake. The almond flour gives is a slightly cakey (=more fluffy) texture. From that standpoint it should not affect the recipe. You MAY want to add another few tbsp of almond flour to make up for the missing bulk coming from the erythritol. Let us know how it turns out!
Hi, don’t know if you are still wondering about brands for coconut cream, BUT if you are in NZ go for the Kara brand 🙂 Just come into pak n save store not long ago and is BRILLIANT. I couldn’t understand why people love coconut cream so much by itself and how theirs was going so thick in the fridge (I would only use mine for curries and berry icecreams). Then our store finally brought in the Kara brand about a month ago, and OMGosh what a difference to the cheaper brands it is! It is beautiful and I think (from memory) is really high in fat. Really worth the little extra you have to pay 😉

Now if you're thinking you'll just handle the problem by brushing and flossing a little more often, guess again. Since the breath odor is coming from metabolic changes and not necessarily a dental-related condition, traditional breath products are not likely to provide long-lasting relief. On the other hand drinking more water intake can do the trick.

I adjusted the servings to halve the recipe. Your ingredient calculator only adjusts the first amount. For example: 300 g/10.5 oz. Unsweetened chocolate. Metric will adjust, but not the imperial. Ingredient measurements switch places for almond flour and powdered erythritol, so it’s the imperial instead of metric measurements that will adjust. Luckily I noticed prior to purchasing or cooking. It looks really good!

Hi Lisa, Sorry you had issues with it. It’s hard to say what went wrong without being in the kitchen with you but can try if you can provide more info. Which version were you making? Are you talking about the pudding layer with version 1? If so, it does firm up more in the fridge but you also need to add enough xanthan gum to make sure it thickens. Let me know what step seemed off and if anything was different from the instructions.

I just found your website and the recipes seem great! I just tried the chocolate candy bar recipe as I am craving treats so badly and can’t have them. However, I found the final product to be quite bitter. Did I do something wrong? Are there any parts I might change? I used almond milk. Hi Rita, how disappointing! I’m sorry your cake did not turn out. I have never heard of ingredients separating in this recipe. To me it sounds like it may have something to do with the kind of chocolate you used, as this is the main ingredient. Maybe it was not suitable for baking? I’d be really interested to hear what the brand was and what ingredients it has. Cheaper brands use vegetable or palm oils instead of cocoa butter, and they may have caused the separation?
Hi Leila, I think you could, but I haven’t tried it. I’d recommend a powdered sweetener (Swerve Confectioner’s or Sukrin Melis) if you do this, so that the chocolate pudding layer is smooth. The replacement for the dark chocolate in the pudding layer should be approximately 1/2 cup cocoa powder, 1 1/2 tbsp butter, and 3 tbsp powdered sweetener (may need to adjust to taste). Let me know how it goes if you try it!

7 carbs additional carbs devided by 16 servings? 0.43 additional carbs per serving. Definitely still low carb. I am on a low carb not a no carb diet. This delicious low carb recipe has helped me (in part) lose 45 pounds and still get my dessert fix at the end of a low carb meal. I do not think I could do a low carb diet if I had to give up sweets! It freezes well when saved in individual servings or keeps in the fridge for days. Well done!
I used option 2 that does not call for the xanthan gum. The recipe called for “heavy cream” which I used. Should I have used “heavy whipping cream?” “Pecan meal” I used was “pecan chips” made by “Fisher”. Finally, the parchment paper seemed to disintegrate into the bottom layer of the dessert 🙁 please help! We love this dessert and want to nail it!

You did see the note in the recipe for all other sweeteners which are NOT erythritol-based and much lighter in weight (and therefore WOULD be too sweet if used by weight?) Hi. I tried making the zucchini tortillas for the first time this week. They did cook and sort of brown, but they did not look as golden color as the ones in your picture. Also, the inside did not seem to cook as much and was still like the batter. So the outside was dry and cooked but the inside was mostly uncooked. Where did I go wrong? I want to try it again!
