Hi Lisa, I think you might end up with chocolate syrup if you use honey for the sweetener. You may want to look into granulated honey, which might produce a coarse or grittier texture to the chocolate, but you may still have a chance of getting the chocolate to solidify. While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice. You can add a tsp oil for smoother results, but it’s not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds. This version needs no refrigeration and can be used anywhere you’d use store-bought chocolate chips.
Hi Stephanie. I’m sorry the dessert did not set well. It could be one of three reasons. First, as you mentioned, it could have been the lactose free cream cheese. Having the dessert refrigerate overnight should have been perfect. The other reason may be because I updated the pudding recipe to have less cornstarch/ arrowroot because people kept complaining that they did not want to use it even though it resulted in a superior recipe. I would suggest adding 1/2 more teaspoons of arrowroot powder. And third, it may have been that the pudding was not cooked enough. It should be really thick after cooking and refrigerating before adding it to the layered dessert. I hope this helps. -Kim

I was trying to figure out why mine came out goopy and grainy. It hasnt solidified yet so i will see soon if i messed it up too much. When i was pouring my vanilla extract in it i goofed and over poured so at first i thought that would cause trouble, but figured it would be fine since i planned to just use however many splenda packets seemed necessary by tasting as i go. Then i thought hmm let me add 1/4 tsp of cinnamon and i thought that was the culprit, so i added a little more fairlife milk to help make it more liquid again…. but nope… and the flavor and consistency still wasnt where i wanted it so i added even more vanilla and milk afterf the powdered splenda…. thats when i noticed a bit of bubbling on the edges of the bowl and thought oh crud turn the heat down! I wonder if i should have added more oil but i didnt want to add extra oil and make it so it would never have a chance of solidifying.

I have a cat and she happily eats “Fussy Cat” Grain Free cat food http://www.vippetfoods.com.au/V.I.P.-Petfoods-Grain-Free-Dry-for-Cats/0,27127,112732,00.html . I don’t know if this is the best, but she has this alernating with fresh meat. Since she has changed to this formulation, she has had no gingivitis (inflammation of her gums).

That’s a great question, Tania, and unfortunately, the problem is also the solution. Saturated fat is, by definition, solid at room temperature (as opposed to unsaturated, which is liquid at room temp), so it is what makes the chocolate hold its shape. If you were to use another fat, you’d have to add some sort of stabilizers, either chemical (gross) or starch (which would make the chocolate taste more like a brownie, but with a really bad texture, and I wouldn’t recommend this). I have seen fiber, such as acacia or psyllium, used in commercial chocolate, but I have never tried it myself. So, unfortunately, coconut oil is your best bet in this case. It does have many health benefits, but I understand that it is not appropriate if you have to watch your saturated fat intake.

So, I normally don’t comment on recipe blogs only because there’s like already enough comments and people get general ideas. But I am making the exception this time because this method is AWESOME! I was going to go 1.5 times the guide and do a 9×13 but opted to go 8×8 instead just to be sure it was tasty. Now I wish I’d done the 9×13 because on Christmas Eve, the vultures in my family swooped down on this so fast, it didn’t have a chance of living through it. I swapped in hazelnut flour for the pecans because A. I didn’t have pecan flour, B. I did have hazelnut flour, and C. Chocolate and hazelnut – need I say more? 🙂 The other thing worth noting is that I didn’t use parchment in my glass pan, just sprayed it well with coconut oil spray and even the first piece came out nice-n-neat. The crust was almost like a nice thick crunchy butter cookie and the other layers were awesome. One of the best desserts I’ve ever found and made. Happy also you re-did it not to include xanthan gum. This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

Hi Kelly, All packaged foods will have a nutrition label that list the macros per serving, including fat, protein and cabrohydrates. Net carbs, which is what most people look at for low carb and keto, are total carbs (the amount on the label) minus fiber and sugar alcohols, as explained in the article above. I have a low carb food list here that gives you a full list of all the foods you can eat, and the net carbs in each. Jamie is right on this, 1 cup of cocoa butter converts to 218 grams. Adding a whole cup of cocoa powder to just 100 grams of cocoa butter would indeed be overwhelming. I recommend that nobody follow the recipe unless they make sure they measure the cup of cocoa butter AFTER it is melted or use a scale to weigh it to 218 grams, thus avoiding this major error in your conversion rate on the cocoa butter.

I'm giving this candy only a 'fair' rating because in spite of being called 'DiabeticFriendly', it spiked my blood glucose up 40 points. I am very careful to check my blood glucose levels after eating anything new (especially anything sweet) because I manage my diabetes with diet alone. These chocolates taste great, look beautiful, arrived before the estimated delivery date and were beautifully presented. However, two pieces spiked my blood glucose as much or more as a regular candy bar would have. Your mileage may vary.... use caution!
It’s not recommended because this chocolate doesn’t contain any of the stabilizers that commercial chocolate and chocolate chips use to hold their shape under high heat. If you want to use it, I’d recommend chopping it up, then freezing it solid first. I wanted to tell you about some changes I did to this tonight that were amazing. (Don’t get me wrong-the original is amazing too, but I was craving coconut.). I substituted coconut butter for peanut butter, coconut extract for the vanilla, and coconut stevia for the English toffee. It was so amazing with just a little whipped cream on top and a very small dollop of strawberry jam. Live your recipes!

Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.

Hi Arti! Great question. It depends on where you are, but the answer is probably yes. If you’re not in the US, the substance you call essence is what we call extract: it’s a liquid that is made from vanilla beans and alcohol. If that’s what you have, regardless of the name, go for it! Just don’t use anything that is made using imitation flavors. Hope this helps!

Hello, Anna. Thanks for the compliment and great questions. You may use any sweeteners that you prefer -BUT- the taste will be different. If you are okay with it having more of a brown sugar taste and brownish color then go for it! The coconut crystals will be especially good in the crust I think. Stevia glycerite is a viscous super-concentrated liquid form of stevia that I feel is much less bitter than other brands. I am guessing that the nu-stevia is very similar to KAL Pure Stevia powder which I love but don’t use in my blog recipes as I try to stay more in-line with other bloggers so readers don’t have to buy 12 different products! You may need to experiment a little with your sweeteners just a tad to get the taste you want, so taste as you go. I would LOVE to hear how your sweeteners worked in the recipe as it may help someone else who may have the same issues with erythritol. Have a great week!

TAKE YOUR TIME when melting the chocolate. If you overheat it, it can separate into cocoa and cocoa butter and become sludgy. If you melt it in the microwave, break it up as much as possible and heat it in 2 x 30 second bursts, followed by 10 second bursts. Take it out before it's fully melted and just stir a few times, letting the rest melt on its own.  
Hi Lorena, I’ve actually made it with 1/2 cup of erythritol one and found it not sweet enough for me – but we’re all different. You did see the note in the recipe for all other sweeteners which are NOT erythritol-based and much lighter in weight (and therefore WOULD be too sweet if used by weight?) Thanks for your comment, it’s always useful my myself and other readers to know what other people think and how they alter the recipes to make them work for them.

Made this for my church Christmas Potluck. Flavors were amazing but dish was a soupy mess, even after refrigerating for almost 24hrs. If I make again, i will not add almond milk to pudding and make 1.5-2x more of the whipped cream. I didn’t have enough with the recipe amount and had to run to store for more heavy whipping cream. Found these chocolate bars when they used to come thru Costco once a quarter. Wow they are good! I'm a milk chocolate fan, my hubby is a dark chocolate fan... they were cheaper there but worth it. With only 2 net carbs for the whole chocolate bar, it satisfies anyone who can't do the sugar. Many of the sugar free chocolate has a lower grade maltitol and it gives some unpleasant side effects if you eat too much, this candy does not. I went with the dark chocolate no flavor and it's $10 more (was for a bday so I went with the favorite), don't understand why that is...

Hi, just found your site, and it seems very helpful so far, so Thank you! I quit smoking a year and a half ago, and have subsequently gained 35 pounds, although I needed to lose a bit before that. (Too much wine, sugar and carbs)! I also have entered peri-menopause, which has wreaked havoc on my energy level and sleep. Hi Libby. Re foods to eat. Still a newbie and exploring all this. Re the foods for example cocnut cream- is there a specific brand or type you,should buy? Same with butter and meats- re grass fed versus grain fed. Coconut oil- is there ones you should or shouldn’t use brand wise. Lchf site says grass fed meat and butter. Does it have to say organic on the butter. Labelling is really bad in regards to this. And your cheeses- re Brie for,example- are they all they same or are there certain ones of them you have to buy ? This goes for all cheese that you can have to- are there ones better for you than others?

I just found your website and the recipes seem great! I just tried the chocolate candy bar recipe as I am craving treats so badly and can’t have them. * Pecan meal and pecan chips are not the same thing. Pecan meal has a fine consistency, almost like flour, just a tiny bit more coarse. “Pecan chips” are much larger pieces and wouldn’t work the same way, unless you grind them into a meal/flour yourself. Most likely, the extra butter from the crust layer absorbed into your parchment paper because the “pecan chips” wouldn’t absorb it the way an actual pecan meal would.
You’re very welcome, Judy! I’m glad it’s helpful. If you are keto (as opposed to low carb), unfortunately peaches would not allow you to stay in ketosis. You can check my keto food list to help determine what is keto friendly. Of course, there are worse things than fresh fruit 🙂 but in the end our bodies still see the sugar. That being said, it doesn’t mean you sabotaged the whole day. Just pick up again – you got this!! (And for next time, try some fresh berries in moderation when you’re craving fruit.)

TAKE YOUR TIME when melting the chocolate. If you overheat it, it can separate into cocoa and cocoa butter and become sludgy. If you melt it in the microwave, break it up as much as possible and heat it in 2 x 30 second bursts, followed by 10 second bursts. Take it out before it's fully melted and just stir a few times, letting the rest melt on its own.  

 But besides the cost of buying healthier chocolate at stores let’s talk about cravings shall we?! Giving in to chocolate cravings can be the biggest downfall when it comes to practicing a healthy lifestyle and/or trying to lose weight. But not indulging in chocolate just because you might lead a sugar free way of life or think you can’t possibly have it now that you need to lose weight, could put someone into depression! The key factor here is not so much enjoying chocolate, but it’s about the kind you are enjoying .
It can be a radical approach for someone who’s used to eating the standard American diet — which is low in fruits and veggies, and high in added sugar and fat — and it may help you lose weight, says Spritzler, adding that the freedom to eat as many carbs as you want may makes it a poor fit for people with type 2 diabetes. Because this is designed as a short-term (30-day) challenge, it’s supposed to be tough. You have to weigh your stick-to-it-iveness before you start, and then plan out what you’re going to do after the 30 days is up.
Keep up electrolytes. The major electrolytes in our bodies are sodium, potassium and magnesium. Because a low carb diet (especially a keto diet!) reduces the amount of water you store, this can flush out electrolytes and make you feel sick (called “keto flu”). This is temporary, but you can avoid or eliminate it by salting your food liberally, drinking broth (especially bone broth), and eating pickled vegetables.
