The replacement for the dark chocolate in the pudding layer should be approximately 1/2 cup cocoa powder, 1 1/2 tbsp butter, and 3 tbsp powdered sweetener (may need to adjust to taste). Let me know how it goes if you try it!
I started seeing a nutritionist, who has started me on a B-12 injection 2 times monthly, and a LCHF diet. He wants me to stay between 20-35 carbs daily for at least 3 months. He says I need to buy ketone strips, to make sure I don’t go into ketoacidosis, however, I am otherwise healthy, and not diabetic. Is this something I need to be overly concerned about? This is going to become a Christmas Day staple at our house. We celebrate our Southern Hemisphere Christmases with beach visits and sprinkler play, and turning on the oven for more than ten minutes seems very wrong when it’s 37 degrees C. My husband and I did sugar-free January, including giving up honey and maple syrup (we did keep wine and unsweetened dried fruit!). It was hard at times, but ultimately super rewarding for both of us! We both dropped a few lbs., and I was able to kick my gross flavored-coffeemate-plus-an-extra-spoonful-of-sugar habit, and am now drinking my coffee unsweetened with just a big splash of half and half (thanks for that tip!).

Inevitably, this won’t be anything that’s good for you and will very likely be one of those foods linked directly to spiking your insulin – donuts and candy for example. As you know by now, eating lots of sugar does nothing good for your health and will cause you to gain weight fast. Hi Stephanie. I’m sorry the dessert did not set well. It could be one of three reasons. First, as you mentioned, it could have been the lactose free cream cheese. Having the dessert refrigerate overnight should have been perfect. The other reason may be because I updated the pudding recipe to have less cornstarch/ arrowroot because people kept complaining that they did not want to use it even though it resulted in a superior recipe. I would suggest adding 1/2 more teaspoons of arrowroot powder. And third, it may have been that the pudding was not cooked enough. Fruit is something that should be limited because of the high fructose content. It is natures candy. Yes, fruit has vitamins and healthy nutrients, but you will be getting far more nutrients from your increase veggie intake. Choose nutrient dense, low carb fruits such as berries. Fruit such as pineapple, mango, and especially dried fruits, should be avoided. Also, avoid ALL fruit juices. They have an incredibly high glycaemic index, which will make your insulin spike (and start storing fat again). “If you are overweight, fruit is not your friend”.
It’s very difficult to use stevia alone without a little bitter aftertaste. Adding a small amount of powdered erythritol or monk fruit can really help get a sweeter taste. For milk chocolate, I prefer using a powdered milk as liquids can ruin the chocolate so I’m not sure how to go about using almond milk. You could try adding a teaspoon at a time and go from there.
I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)

I typically eat scrambled eggs with turkey, a piece of wholebread toast and coffee for breakfast, salad and breast of chicken with vegetables for lunch and something similar (chicken or red meat or salmon) for dinner, with 2 snacks of 3 rice cakes with 150 gr. of turkey and a protein shake if I go to the gym (weights training 3x week). In the first 3 months of eating like this my % fat went down from 17.5 % to 14 % (44 yr old male), while keeping weight constant, but another 4 months later I stay the same. I wanted to ask, if I want to continue to lose fat, should I:
Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. Hi Emily, The dessert is very rich, so to me the 9×9 pan is enough for 16 people. It comes out to about a 2.25″x2.25″ square per serving, which doesn’t sound like a lot but it’s quite filling. I made it in a 9×9 when we had 12 people over, and we had more than 1/4 of the pan left over. Of course it depends on what else you’re serving and how much people want. It stores fine for several days too, so you could easily double the recipe to make it in a larger pan if you’d like. Nothing wrong with leftovers. 🙂 Enjoy your party!

Make sure you're heating your cocoa butter slowly, microwaving in short increments and stirring in between, the cooling slowly as well. So let it come to room temp to solidify, then store in the fridge, rather then sticking the warm chocolate in the fridge or freezer to chill more quickly. This helps to prevent bloom, that dusty white layer than can develop on the outside of chocolate after condensation forms.

If you want to lose weight, then cut the carbs down until you start dropping. It’s always a balancing act. After decades of Weight Watchers and other crazy diets I now don’t count a single thing. It is the most intuitive way of eating for me for over 3 years now. I pretty much stay at goal weight and still enjoy my red wine, 90% chocolate at weekends and some occassional low carb baking.

Then don’t give up the fruit! Go for it. You sound like a fit and active person within the normal weight range. Generally the advice is to stay off excessive fruit, and high sugar fruit especially if people are overweight or have other health issues, then in that case fruit is not your friend. But with everything, eat within your personal carb limitations and eat to what is appropriate to you. Whole fruit is somewhat self limiting due to the fibre and water anyhow. You obviously have worked out a fabulous routine and it is working, so why change, stick with it Tom and enjoy 🙂
Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. Example 2: Last year, during the middle of Sugar Free January, Bjork and I went on vacation to Hawaii. This time I had decided to take a more flexible approach, so I drank lots of (very sweet) fresh fruit juice, and I had a Coke on the beach, and we split one dessert together. I was aware of what I was eating, and while it made coming back to sugar free eating a little more difficult, it didn’t derail my Sugar Free January experience. It was just a different, more flexible approach.
Any suggestions for butterscotch pudding to make this with? We always made a half chocolate (on one side not mixed) and half butterscotch which was personal favorites with this combo. No idea where to begin making butterscotch pudding. Will have to research I suppose. BTW we call this Maxine for some reason through our families recipe of this. Hi, Amy. Yes, you can replace it – it is ground really fine and added to other ingredients. The coconut helps reduce the carbs a bit, but you can use more almond meal if you want. The texture will be a little different, but it should still taste good. Do yourself a favor and make the pastry cream a day or two before you assemble, so it’s nice and cold. Let the assembled dessert chill overnight. Use full fat ingredients. Another reader used a lactose free cream cheese and her dessert didn’t set, but she may not have cooked the pastry cream enough, too.
