I’m so excited about this recipe! It is hard to find gluten and sugar free in the same recipe sometimes. My only question is: Is there a way to make this dairy free as well? I’m trying to think of what would be a good dairy free substitute for Greek yogurt. I’ve seen some dairy free yogurts at the store, but they aren’t sugar free. I’m following a gluten/sugar free diet, but both my daughter and my son need dairy free, and if I made a cake, they would want to have some. As often as I make cakes and sweets for the rest of the family and I don’t get to eat them, it would just not work to make a cake that some of them couldn’t eat. The only adjustment I made to the recipe, was the addition of about a tablespoon of lemon juice to the cream cheese mixture; for just a little bit of tanginess to off-set all the sweetness. This is also how we make 4-Layer Delight back home, so I thought it would work here. I’ve tried it both ways, and the little hint of sourness from the lemon really seems to make it perfect; to me and the wife at least.

That sounds like a good idea! I also try to avoid gums/thickeners most of the time, but haven’t found a good replacement for pudding. I’ve never tried gelatin though – it might work! I’d start with the same amount and then see if you might need more than the amount of xanthan gum to get it thick enough. Let me know how it goes if you give it a try.

Hi Rita, how disappointing! I’m sorry your cake did not turn out. I have never heard of ingredients separating in this recipe. To me it sounds like it may have something to do with the kind of chocolate you used, as this is the main ingredient. Maybe it was not suitable for baking? I’d be really interested to hear what the brand was and what ingredients it has. Cheaper brands use vegetable or palm oils instead of cocoa butter, and they may have caused the separation?


Absolutely, Janae. You can use more of your favorite sweetener. I do want to mention that erythritol based sweeteners tend to crystallize in wetter recipes (puddings, lemon curd) and adding more may result in crystals forming and a little crunch here and there. That only happens after a few days, though. This is a delicious recipe and I hope you enjoy it. -Kim

If you can't have candy with real sugar then these are passable, but not much better, if at all, than say a Hershey sugar-free dark chocolate. Dark chocolate is usually more dense (so not soft, right?) and not as sweet as milk chocolate. These need a firm bite and the overall taste is just ok (but at least there is no chemical after taste as with some sugar free stuff), but they served the purpose. Main gripe is, at least with this seller, you have to order enough candy bars to supply a neighborhood of diabetes patients (like me). So, still searching, but in the meantime munching away at second of 24 bars!
Mary Lynne, I am so happy you tried it and found it do-able! I like it best with a baked crust – more cookie like. It’s really not any harder to prepare than the original version we grew up on. I think some people see multiple steps or see a long ingredient list and think it’s going to be hard. In any case, hooray! Is the Stevia a necessary component to making the dish work or is it just an extra sweetener to coincide with the Erythritol? We’ve tried several versions of Stevia, and I just can’t seem to find my way past the after-taste, even in small amounts. I’ve been reading that it’s used to counter something about the Erythritol, but I wasn’t sure if that was the case here (and honestly have been too shy to ask anyone else lol).

Had I not read your sugar free post I would’ve just kept on living my regular sugar-filled life. I didn’t go 100% sugar free but was very aware of everything sweet that I put in my mouth. I was super surprised at how easily my sugar cravings disappeared! I guess they were habits and not cravings? Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. It’s not recommended because this chocolate doesn’t contain any of the stabilizers that commercial chocolate and chocolate chips use to hold their shape under high heat. If you want to use it, I’d recommend chopping it up, then freezing it solid first. Add it to the batter at the last possible minute before baking, and don’t use it in any cookie that bakes more than about 10 minutes. Sorry it’s kind of a high maintenance method! I like this chocolate very much. There is no taste difference between their sugarless chocolate and chocolate with sugar. I gave this product only 4 stars on account of one problem that I have experienced. Sometimes the chocolate I have received has been exposed to excessive heat and has turned white. As any chocolate lover knows, the taste of such heat damaged chocolate his horrid. If I point this out soon enough after receiving the shipment they make good with a new shipment. Once I only discovered the issue several months after the purchase and they declined to send me a replacement shipment. So, what I do now is go through each box I order and check a few bars to see if there is heat damage.

Hi Sherri, You can still use the crust you made. You can try making the other layers thinner too, but they might be too thin. I would just make the other layers approximately the same as the original recipe by multiplying the amounts by 1 1/2. The easiest way is to enter 24 (instead of the default 16) for the number of servings on the recipe card, this will adjust the amounts of all the ingredients. Of course your bottom layer is already thinner, but it should still be good. I hope you like it!
Last year while I was going grain free/LCHF, I decided to get him and his siblings gluten free (While planning to eventually get him completely grain free, however that hasn’t gone to plan yet lol!) The futher away from gluten he was, the more veges he started to willing eat. We just started him off with carrots as he seemed to like them more than other veges. He loves potatoes and meat so we would tell him have a carrot then you can choose to have a mouthful of potato/meat then have another carrot etc. We just kept perserving, adding in the other veges and adding in more (Eg you can have some potato after you have eaten 4 carrots etc) and now a few months ago for the first time he cleaned off ALL his veges before he even touched potato or meat without being asked. It hasn’t happened again since BUT he will eat all of one food group before having something else.

Hi. I made this recipe using a half cup cocoa powder, a quarter cup powdered icing Natvia (stevia erythritol) and cocoa butter I had in the fridge for over a year! :O. I also added a quarter cup chopped Brazil’s as they are so low carb. I wasn’t expecting much but it was absolutely fabulous!! My whole family scoffed the lot and they are not even Keto! Hi, I have been giving ditch the carbs a go…so far only in the form of bread,pasta,rice, this was quiet hard for me as I didn’t realise how much I got through a day! I’m a fussy meat eater as I was a veggie for a number of years so still only eating veggie quorn. I don’t drink fizzy drinks or alcohol. I have already cut out cakes/biscuits apart from the odd biscuit! I have lost weight and I still need to loose more…I really want to change my children’s diet also but I have one child who will eat/try anything and a two year old who won’t eat vegetables, luckily she has never been keen on pasta,rice or potatoes anyway but think I will struggle with her…so any tips welcome! She loves all fruit which I let her have as she doesn’t eat veggies but not sure if this is wise!

When you eat carbohydrates, your body stores the extra as glycogen in the liver, where they are bound to water molecules. 7 carbs additional carbs devided by 16 servings? 0.43 additional carbs per serving. Definitely still low carb. I am on a low carb not a no carb diet. This delicious low carb recipe has helped me (in part) lose 45 pounds and still get my dessert fix at the end of a low carb meal. I do not think I could do a low carb diet if I had to give up sweets! It freezes well when saved in individual servings or keeps in the fridge for days. Well done!

The seeds of the cacao tree have an intense bitter taste and must be fermented to develop the flavor. After fermentation, the beans are dried, cleaned, and roasted. The shell is removed to produce cacao nibs, which are then ground to cocoa mass, unadulterated chocolate in rough form. Once the cocoa mass is liquefied by heating, it is called chocolate liquor. The liquor also may be cooled and processed into its two components: cocoa solids and cocoa butter. Baking chocolate, also called bitter chocolate, contains cocoa solids and cocoa butter in varying proportions, without any added sugar. Powdered baking cocoa, which contains more fiber than it contains cocoa butter, can be processed with alkali to produce dutch cocoa. Much of the chocolate consumed today is in the form of sweet chocolate, a combination of cocoa solids, cocoa butter or added vegetable oils, and sugar. You mentioned ketone strips. If they are the urine strips they are useful to see if you are in ketosis, fat burning mode, but be aware they are not completely accurate but are a good guide to how you are doing. The blood strips are way too expensive but more accurate. I have a blood glucose monitor and went through a phase of testing to see how I react to dairy, protein, cream, coffee etc. I rarely do it now as I want this way of eating to be as simple as possible, but again, a useful tool starting out.

Anyway Dad had to exile himself back to Japan to avoid an all out gang war, and Zin now becomes an outcast single parent, who has to struggle with cancer, as well as raising an autistic child.
My daughter and I are going to give this a go! I did a stint of Whole30 last year which is much more restrictive (no dairy, no sugar, no peanuts, soy, grains…a lot of no fun), and I don’t think I can do that again. Though, to its credit, those 30 days did teach me that sugar hides EVERYWHERE–in meat, jarred spaghetti sauce, deli meats…it’s crazy! And it does have an effect on your ability to taste “real food”!
